I had alo come across a massive amount of cows spawned in a small 3 x 4 area  i got about 3 stacks of leather from it, but if we have alot of people doing this on the server, cant be good right?

Well, the only time this amount of entities should affect server performance is when a player is within range so the server loads them. If the chunks aren't loaded, it won't affect the server at all. But players could come within range of those chunks at any given time. It's the same concept as a redstone lag machine, really. So long as the chunk(s) in which it is located is/are not loaded, it's all fine and dandy. As soon as those chunks are loaded, however, get ready for a decrease in server performance, even if it's just a tiny bit.
